Avocado Deviled Eggs

Recipe of the Week:  Fat Guacamole Devils

Check it out, it’s a new take on deviled eggs – eliminating the mayonnaise and adding avocado for more healthy fat!  I made these with lemon juice because I didn’t have lime juice, it was good but I think the lime juice is definitely needed.

Ingredients:

  • 2 hard boiled eggs
  • 1/2 avocado
  • 1 teaspoon hot sauce (or more to taste)
  • 1/2 teaspoon lime juice
  • salt & pepper to taste

Instructions:

Peel and halve the eggs and spoon their yolks into a small bowl.

Mash the yolks with the avocado, hot sauce and lime juice; add salt and pepper to taste.

Refill egg white halves with yolk mixture, and enjoy!

    I also recently heard of using hummus instead of mayonnaise. I would love to try it with either of these two options instead of mayo! Sounds yummy!
