Emulsion stabilized by starch nanocrystals
WebFeb 15, 2024 · The olive oil-in-water Pickering emulsions stabilized with starch nanocrystal (SNC) were prepared for the morphological and rheological studies. Different kinds of shear flows were applied and the viscoelastic responses of emulsions were detected in terms of SNC concentrations (0.2-2.0 wt%) and surface acetylation levels … WebIn this work, we report an all-natural Pickering emulsion stabilized synergistically by starch nanocrystals and zein protein nanoparticles. Our result shows that the electrostatic interaction between the two types of particles greatly affects their assembled structure at the oil/water interface, which is closely related to the emulsion stability.

The work reports for the first time that starch nanocrystals (SNCs) prepared by sulfuric acid hydrolysis from native waxy maize starch exhibit a great potential to act as ...
WebJun 1, 2024 · Herein, starch nanocrystals (SNCs) made from maize starch by H 2 SO 4 hydrolysis were used to co-stabilize ASA emulsions with fluorescent carbon dots (CDs) made hydrothermally from gelatin. The introduction of CDs can significantly enhance the stability and reduce the droplet size of SNC-stabilized ASA-in-water emulsions. WebThe stable oil‐in‐water emulsions of 50 vol% paraffin liquid were prepared by using starch nanocrystals as emulsifier when the weight percentage concentration of starch nanocrystal relative to water was above 0.02 wt%. The size of the droplets decreased with the raising of the concentration of starch nanocrystal.
